As you walk around the Good Food Show it is clear to see that gluten free food has really taken off, with more chefs coming round to the idea experimenting with alternative ingredients. After watching Phil Vickery at the The Bakes and Cakes Stage cook up some gluten free alternatives to family favourites, we managed to grab him for a quick chat about why it is so important.
